Heartland Gourmet offer's gluten free baked mixes. I was shocked to find Heartland's "red velvet cupcake mix" at Marshalls for $3.99! I had to try it.
The recipe only calls for 2 eggs, and oil -- easily doable!
The actual mix looked so sparkly - you can see the sugar crystals - so pretty! Add boiling water, eggs, and oil and you have a delicious bake mix! Add 15 minutes in the oven and wallah!
The box recommends a cream cheese frosting. I, on the other hand, will take no substitute for chocolate!!
My number one chef and I made chocolate frosting (well, really, I just interrupted and ate most of the melted chocolate along the way)!

The good news is Heartland offers a slew of additional gluten free bake mixes, including corn bread, cheesy cheddar bread, chocolate chip cookies, brownies and much more. They are currently on sale for for $5.90 for Celiac Awareness Month (or you can try to get lucky at Marshalls, for $3.99!).
